Brisket Rub

  • MSG
  • Garlic Powder
  • Paprika
  • Salt
  • Black Pepper

Mix together in proportions that suit your taste. Rub into brisket.  Follow Brisket Recipe to BBQ.

Pork Rub

  • 2 tablespoons salt
  • 2 tablespoons sugar
  • 1 tablespoon brown sugar
  • 2 teaspoons chili powder
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • 1 teaspoon MSG
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper

Mix all ingredients, rub into pork, BBQ as usual.

Hilda’s Bar-B-Que Sauce

  • 1 bottle bar-b-que sauce (any brand)
  • ½ cup salad oil
  • 1 tablespoon minced garlic
  • 4 tablespoons brown sugar
  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons soy sauce

Mix all ingredients in quart container. Stores in refrigerator.

One Shot Sauce

  • 1 pound butter
  • ½ cup finely chopped onion
  • 2 cloves garlic, minced
  • ½ cup whiskey
  • ¼ cup Worcestershire sauce
  • 1 tablespoon pepper
  • 1 ½ teaspoons dry mustard
  • 1 teaspoon salt
  • ¼ teaspoon Tabasco

Melt butter in a saucepan; add onion and garlic and cook slowly until onion is soft. Add remaining ingredients and beat to mix. Makes 3 cups.

DW’s Hot Sauce

  • 1 can chopped or whole peeled tomatoes
  • 2 jalapeños, cut in quarters
  • 2 tablespoons fresh chopped cilantro
  • ½ cup chopped onion
  • ¼ teaspoon garlic powder (to taste)
  • ¼ teaspoon salt

Put ingredients in food processor or blender and puree. Makes about 2 cups.

Nelda’s Red Sauce

  • 3/4 cup Ketchup
  • 2 tablespoons prepared mustard
  • 2 tablespoons horseradish
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Tabasco
  • 1 teaspoon white or red pepper

Mix ingredients in small bowl. Makes about 1 cup. May be used as a steak sauce or seafood cocktail sauce.
